Improve food safety and shelf-life by the application of novel antimicrobials isolated from spoilage associated Lactic Acid Bacteria  (LAB)

 

• Research Grant by Govt of India of $100,000 for 1 ½ yr

• LAB successfully compete with microorganisms in spoilage microflora

• LAB is a diverse group of bacteria

• Spoilage microflora of different foods can reveal novel LAB and novel antimicrobials

• APPLICATION: Isolated LAB antimicrobials will be applied in foods to reduce/eliminate foodborne pathogen
