Further Processing
The deboned breast meat is subjected to portioning using highly-automated robots which use machine vision and artificial intelligence to slice and dice the meat as per the customer specifications. The meat is then marinated in vacuum tumblers and then divided as per the final product requirement. For batter and breaded products, the vacuum tumbled meat goes through a separate line of pre-dust, batter and breader followed by an in-line oil fryer (to set the batter) and an oven. The product is then flash-frozen, placed in plastic bags (10 lbs) and placed in boxes on a pallet in a freezer (-20C). The non-coated chicken products that need only baking undergo a separate process.
